The birth of Galantería

The day I fell in love with Champagne was 18 January 2011. I had recently started working at a French drinks company when my manager said we would have Champagne with lunch.
It was magical: discovering the work of French artisans, their tradition, care and enthusiasm. That day stayed with me. I decided that when I returned home, we should create something special.
That was the beginning of the idea for Galantería: a sparkling wine from Cádiz, inspired by the beauty and craftsmanship I had discovered in France.
After returning home in 2016 and spending three years working with determination and excitement, we finally had our flagship wine. I affectionately call it my glass child.
Looking back helps you understand why certain things happened. The reason for my return home is another story, for another day.
Galantería was developed using the traditional method, with 30 months on its lees and a blend of Palomino Fino and Moscatel de Alejandría, varieties rooted in our region.
My thanks go to my managers, the French artisans and the small wineries making special things. Their example helped inspire our own path.
